Elaine’s Fruit Cake

1 tin (375g) Sliced Mango

500 g Dried Mixed Fruit

¼ Cup Water

1 ½ tsp Baking Soda

Put Fruit, Mango, water and Baking Soda into a

Saucepan and bring to the boil. Leave overnight

Next day add:

2 beaten eggs

1 ½ cups SR Flour

Put in well-greased, lined round tin and bake 180 0C 1 – 1 ½ Hours

(Usually ready in 1 hour)
